What do GBT bison eat?

Our bison are pasture raised and graze on grass. They are also provided with free-choice hay, corn, and soy beans, meaning that it is offered however they are not forced to consume it. We never use feed additives, growth hormones, or antibiotics.

What is the difference between “all natural” and “organic”?

USDA guidelines state that "natural" meat and poultry products can only undergo minimal processing and cannot contain artificial colors, artificial flavors, preservatives, or other artificial ingredients such as hormones, antibiotics, or chemical preservatives. To be certified “organic” we would be required to feed our bison organic feed which is extremely expensive causing our prices to increase dramatically.

What is the difference between Buffalo and Bison?

Technically we raise North American Bison not Buffalo. Buffalo is a common nickname often used to describe North American bison; however, this is a misnomer. In fact, buffalo are distinctly different animals from bison. Although both bison and buffalo belong to the same family, Bovidae, true 'buffalo' are indigenous only to Africa and Asia.

There have been a number of explanations offered over the years as to the origin of buffalo as the name for the North American bison, but one explanation is that European explorers upon seeing these unknown beasts called them bisonte, buffes, buffelo, buffles, and buffalo since they looked similar to the more familiar African Cape Buffalo and Asian Water Buffalo. Despite the misnomer, the term buffalo has been used interchangeably with bison ever since.

What is “dry aging” and how does it improve the taste of GBT bison meat?

The process of “dry aging” consists of hanging the sides of bison in a temperature and humidity controlled room for 21-28 days from the date of harvest. The moisture from the meat starts to evaporate leaving a very tender, flavorful meat that is most desired by many elite chefs.

Do you ship your bison meat fresh or frozen?

GBT flash freezes all its bison meat to lock in all the full flavor of the dry aging process. Shipping fresh meat would increase the chances of spoilage while in route to you.

How should I handle it once it arrives?

Your bison meat may be thawed by the time it gets to you. Touch the meat and if it is cool to the touch your order is in good condition and should go in the refrigerator or in the freezer to be eaten at a later date.

How long can I keep the bison meat in the freezer?

You can keep your order in the freezer for up to 12 months in the freezer as long as the outer packaging stays in good condition. Make sure your freezer is set to the correct temperature of 0°F.

How should I defrost frozen bison meat?

Keep your bison in its original packaging and move it from the freezer to the refrigerator.

Thawing times:

Bison steaks, bison sausages, ground bison, and bison burgers: 10-12 hours

Roasts: 5-7 hours per pound

If you require your meat to thaw out faster, fill your sink with cold water and completely submerge the product. If the packaging is not airtight, place it in a re-sealable plastic bag before submerging it.

How do you ship GBT bison meat?

We ship using UPS Next Day or UPS 2-Day delivery. Non-perishable items can be shipped UPS ground. If your order contains at least one perishable item, it must be shipped either Next Day or 2-Day delivery.

How is my order packed?

We ship all meat frozen and vacuumed sealed. We pack your order inside of a Styrofoam cooler with frozen gel packs or dry ice depending on heat conditions. The cooler is then placed inside of a heavyweight cardboard box. This method of shipping is meant to withstand 48 hours of un-refrigerated shipping.

Can I have UPS leave my order if I’m not home?

Yes, just make sure that you noted this request in the “Ordering Instructions” box when placing your order. It may also be beneficial if you leave a note for the UPS driver stating that you authorize them to leave the package.

Please make sure that the package is picked up and refrigerated or frozen that day. We cannot guarantee the condition of your meat if it is not properly refrigerated or frozen the day of delivery. We are not responsible and will not be able to process a refund due to any UPS delivery error.

What days do you ship?


We only ship orders out on Tuesdays. If you place an order Tuesday through Monday it will ship out the following Tuesday.

This schedule may differ around the time of major holidays.

Can I visit the farm and see the bison?
