April Eating Well Features 10-page bison spread

Readers of the health-oriented magazine, Eating Well, are enjoying a major introduction to bison in the publication's April issue. An article entitled "Buffalo Are Back," by NBA member Dan O'Brien of South Dakota, is followed by several pages of recopies from noted chef Bruce Aidells.

Aidells has written about bison in several gourmet and cooking magazines since participating in the 2007 International Bison Conference, including Bon Apetit.
