In the past year, Ron Gallo of Putnam has lost weight and lowered his cholesterol. He credits buffalo meat for the positive changes happening to his body.
"Since I've been eating the buffalo meat for about a year, I've lowered my cholesterol about 40 points. I've lost 20 pounds," he said. "I don't eat beef at all anymore."
Buffalo isn't only a food source for Gallo - it also is how he makes his living. He raises buffalo at his rural Putnam ranch and then sells the meat.
Gallo thinks buffalo, although pricier than some other meats, is a great investment for people because of its nutritional content.
"A lot of people that I sell to are heart healthy," he said.
According to the National Bison Association, buffalo contains only 2.42 grams of fat for a 3.5 ounce serving, compared to 18.54 grams of fat in the same amount of choice beef, and 8.09 grams of fat in select beef. Even skinless chicken, at 7.41 grams of fat in a 3.5 ounce serving, can't compare with buffalo, Gallo said.
