I have to admit, I wasn't too excited to eat bison meat the first time I saw it. Its color can at times resemble a bull or even an elk or moose with a very dark red or even a purple like color to it. But once I tasted the domesticated, farmed version of bison, I have to admit that I really liked it. It has a great taste to it and much lower fat content than beef (though that makes it more difficult to grill and keep that tenderness).
What really brought it home to me were some smoked bison ribs that my dad made. Now, I was expecting a Flinstone type rib (one that could be used as a weapon afterward) but no, the rib bones are actually very small and if you smoke it just right, they fall out. Then you have a big hunk of really satisfying, tender, BBQ'd rib pieces. It was so good.
