Cut from the arm roast, the bison ranch steak is a dense little steak, similar to the sirloin steak, lean and full flavored.

  8-16 oz. Bison Skirt Steak        $16.00

Long, and thin, this steak comes from the diaphragm of the bison, and is perfect marinated and sliced for fajitas or tacos. Be sure to cut against the grain of the meat for the most tender end product.

10-12 oz. Bison Coulotte Steak      $16.50

The cousin of tri-tip, this steak is cut from the top sirloin. Super lean, and high in flavor, bison coulotte steaks work best seasoned or marinated, grilled to medium-rare, and sliced thinly.
