Cut from the shank of the bison, this cut takes its name from the traditional Italian dish consisting of braising veal shanks in white wine, carrot, onion, celery and herbs. We think our bison works just as well as veal, and is more versatile, too. You can braise these in whatever liquid you like, because the flavor is not as delicate as veal.
